Gee Bill, Rum Runner has exceeded the hull speed on many an occasion. Rail  
meat is a necessity, but also going down wind can get you past hull speed and 
is  quite exhilarating
As for crew members peeing in their pants, I've never intentionally ruined  
another person's sailing experience just for kicks. I have taken people out I  
wasn't particularly fond of and then it's no holds barred. :)
