Mike,
Everything in the galley, all food items, cans, coffee, salt and pepper and 
 anything that can mold or rust need to be stored in moisture proof  
containers. I think Mary Lou is the gueen of R22 galley's. Her arrangement of  
plastic containers keeps everything neat and dry. On Rum Runner the TP is  even 
in a plastic bag in case we take some spray over the bow. 
Rum Runner is an 88 model and I've owned her since 1994 and have been a  
member of this list almost as long. I am a charter member of the Rhodes 
extreme  sailing team. Anyone is welcome to come and play with me. Some like it, 
some I  will never see again. Bring rum.

The fact of the matter is that things do get wet  on  boat.  I am not sure
how many years Rummy has owned an R22  but, in my 31 years of ownership of a
boat on a mooring, I can attest to  the fact that all items that cannot get
wet should be stored in sealed  Ziplocs.  This means paper products, charts,
food items, etc.   This prevents moisture spoilage from excessive humidity 
in
a closed cabin  as well (sweating at the waterline).  There are many sources
of rain  or sea water and you can go crazy trying to seal them all.
