Art,
Hull speed is easily surpassed. It just takes a lot of ballast (crew),  
enough wind and a lot of rum.
I spent last weekend down on St. Simons Island with Captain Bob Keller  
(Former Rhodes owner, Yankee Clipper) on his new to him Catalina 310. Had 
enough  wind to get his hull up to 8.3 which is faster than the rated hull speed 
for his  boat.

For the UPS, I have a seperate halyard that is there for whatever I  choose 
to hoist (ie flag, Christmas lights, UPS, etc) mostly is just bangs the  
mast like everyone else in the marina (I wouldn't want to be the only quiet  
boat on a breezy day :-)) I have found that while the UPS is self furling, it 
 has a tendancy to try to come out if you hoist it just to motor out or 
other  times, so I keep it laying on the fordeck until I am ready to deploy (if 
it is  anything over 5 knots I leave it in the bag since I know I won't be 
using  it)

On the question about the furler, I am presuming you are asking  about the 
130; and I cannot answer. I have never had the sail off the furling  tube (I 
have on the main, and that sail has the groove in the furling tube  that 
one inserts the sail into) and have not ventured to inspect while under  full 
sail to verify. I do know it has a luff rope cause I can see  it.
